Step 3: Cover and refrigerate for 24 hours. 

Step 4: Remove the sausage mixture from the refrigerator. The mixture can be used in a number of ways—it can be crumbled in pasta, tacos, salads, or over rice. 

Step 5: Heat olive oil over medium-high heat for 1-2 minutes in a medium saucepan or cast-iron skillet. Step 6: For crumbles, cook the mixture for 5-7 minutes, stirring every 2 minutes. If cooking patties, cook on the first side for 3-5 minutes and 3-4 minutes on the other side—the cooking time will depend on the size of the patties. The internal temperature should reach 165° F.
